Pastry Chef Paul
Collins has been in the pastry food service industry for over 29 years, and has
worked for some of the finest clubs throughout the United States.
He started his
baking career here in Jacksonville under Pastry Chef Fritz Reinhardt at The
Ponte Vedra Inn & Club in 1979. Moving west, he was the Pastry Chef at Paradise
Valley Country Club in Scottsdale, Arizona; a pastry chef for The Red Lion Inn
Hotels out of Vancouver, Washington; and the Pastry Chef at Moon Valley Country
Club in Phoenix, Arizona.
He has been the Pastry Chef at the prestigious Epping
Forest Yacht Club in Jacksonville for over 16 years, where he continues to
create memorable pastries and cakes experiences for the members and guests.
Although not formally or classically trained, Chef Paul has excelled in creating
beautiful wedding cakes, imaginative grooms cakes, and artistic pastries and
desserts to the Glory of God. He opened Signature Cakes by Paul Inc. in
late October of 2006 by the Grace of God, and with much help and encouragement
from family and friends. He has been married to his gorgeous and delightful wife
Sharon for 28 years (she married him for chocolate), and they have six
enthusiastic but gracious children.
